Classic Miso Soup

INGREDIENTS (makes 4 cups)

☐ 4 Tbsp umamiso™ Soy or Chickpea Miso

☐ 2 tsp Dashi Powder

☐ ½ Package Silken Tofu (cubed)

☐ 4 Shiitake Mushrooms (thinly sliced)

☐ Scallions (thinly sliced) (as desired)

DIRECTIONS:

1. Combine dashi powder with water in small pot, bring to a boil on medium heat.

2. Add mushrooms, cook 2 minutes. Add tofu.

3. Remove from heat.

4. Using a soup ladle, dip miso paste into the broth, using chopsticks or a spoon, muddle miso mixed with broth in the ladle until well combined.

5. Serve with scallions.

NOTES:

If you don’t have Dashi powder, you can substitute chicken or vegetable broth, or even just use water. You can experiment with various types of vegetables and other ingredients to customize and make it your own so explore and find your favorite ones!

Maple Garlic Miso Salad Dressing

INGREDIENTS (makes ⅓ cup)

☐ 2 Tbsp umamiso™ Chickpea Miso

☐ 2 Tbsp Olive Oil

☐ 1 Tbsp Sesame Oil

☐ 3 Tbsp Rice Vinegar

☐ 1 Tbsp Vermont Maple Syrup

☐ ½ tsp grated garlic

☐ Approx. 3 Tbsp Water

DIRECTIONS:

1. Put all ingredients except water in small mixing bowl. Whisk to combine.

2. Add water, 1 Tbsp at a time, until desired consistency is reached.

3. Whisk again until water is well incorporated.

Chickpea Miso Mayo Dip

INGREDIENTS (Serves 1-2)

☐ 1 Tbsp umamiso™ Chickpea Miso

☐ 2 Tbsp Mayonnaise

☐ Fresh Ground Pepper (Optional)

☐ A Few Drops of Soy Sauce (Optional)

DIRECTIONS:

1. Mix miso and mayonnaise together.

2. Add a few drops of soy sauce, fresh ground pepper and mix again! (Optional)

NOTES:

This Miso Dip is so easy and you can make it in just a few minutes! You can eat it with fresh or steamed vegetables, or crackers or chips. It’s perfect for snacks and can be a quick and easy potluck appetizer to bring! You can also use it as a flavorful spread on sandwiches to add great umami!
